A little video from my time in Guatemala. This is a coffee drying patio where coffee is spread out to … dry. At this point in the process, the coffee cherry has been picked and the mucilage has been removed. The seed (bean) is then set out to dry with the farmers periodically walking through and turning the beans to speed up the process. The outer husk (pergamino) is still on the bean, which is why it has a hay-like color to it. The pergamino is removed after the beans have fully dried.
